Here is a delicious free recipe for you: TACOS AL PASTOR (to make approximately 10 well served tacos) or meat "Al Pastor" if you only want the meat as a dish (if so, omit the tortillas) INGREDIENTS: 8 oz El Yucateco achiote 1 lb of your favorite beef or pork meat cut in medium to small pieces (it’s great with beef sirloin or pork shoulder) 1 cleaver butcher knife (flat knife) Cutting board (preferably wooden) 10 corn tortillas (regular size or street taco size) Hey, you can also make fish tacos if you want! Just replace the beef or pork with your favorite fish 😉 ½ cup of squeezed limes or orange juice 6-8 tbsp of cooking oil or lard ½ tsp of salt ½ tsp of black pepper 1 tsp of minced garlic 4 oz of crushed pineapple 2 small white onions 1 bunch of fresh cilantro *Your favorite hot salsa or pico de gallo (ingredients not included here) PREPARATION: Add 8 oz of El Yucateco achiote in a bowl and mix with ½ cup (4 oz) of limes or orange juice Add the minced garlic, salt, and pepper (let sit for a moment while you prepare the rest) Then, slice one onion (thin slices) Chop the other onion (small cubes) Chop ½ bunch of cilantro Add 2 tbsp (or as desired) of your favorite cooking oil or lard to a skillet at medium-high temperature, and add the sliced onions, mix well but don’t burn. Add the meat and lightly grill but don’t overcook so it won’t seal yet. Turn off the heat, add the previously prepared achiote marinade to the meat, mix well with a spatula and let sit for about 30 minutes. Turn on the heat again at high temperature, then quickly mix the meat well until it reaches the desired color and texture (usually crispy on the edges but watch out for the onions not to burn or it changes the flavor). On a separate pan, add 2 tsp of cooking oil and brown the crushed pineapples (and reserve). Then, on a separate pan or skillet, add 2 tbsp of cooking oil or lard, and start heating up the tortillas (you may heat up 2-3 tortillas at a time, and simply stack them up on a plate for now). Chop the meat into smaller pieces on a cutting board. Then, proceed to prepare your tacos by putting 4-5 open tortillas on a plate, add the meat, the grilled pineapples, the chopped onions, cilantro, and your favorite hot salsa or pico de gallo!
