Fruit production occurs in the fall, with many growers preferring to gather fruit shortly after the first frost. The fruit is high in vitamin C, and extremely astringent when unripe. Once ripened, the fruit is softer, often wrinkled, and sweet and luscious. American Persimmons can be eaten raw or used in recipes such as syrups, puddings, pies, wines, ice creams, and jellies. The fruit is eaten by birds, raccoons, skunks, white-tailed deer, semi-wild hogs, flying squirrels, and opossums. The heartwood of the tree is very dark, hard, and dense (the tree is related to ebony), and is used in the manufacture of golf club heads, billiard cues and shoe lasts.
